Originally invented by Alto-Shaam founder Jerry Maahs in the late 1950s, the Alto-Shaam Cook and Hold introduced low temperature cooking to the foodservice industry and has remained the standard in cook and hold ovens. Often called The Shaam, Alto-Shaam Cook and Hold ovens utilize exclusive Halo Heat technology, which surrounds the oven cavity with soft, gentle heat. This sealed heating environment traps meat s natural moisture, dramatically reducing meat shrinkage and promoting enzyme action and natural aging, providing naturally tender meat. This simplified cooking technology uses very little electricity, and since no hood ventilation is required, your operating costs will be very low.
This unit is stainless steel on the front, sides, and back. The entire unit is insulated, including the doors, to assist in saving costs for heating. Each door has a large viewing window, a heavy duty magnetic latching system, and adjustable vents for moisture control. Each cabinet has 3 wire racks with 8 rack postions, a light, and a removable drip pan/crumb tray. For controls, each unit has a toggle switch for the light, 2 timers, a holding temp control knob for temps of 60-200F, a cooking temp control knob for temps of 100-350F, and holding or cooking indicator lights.
