Serrano Ham is the traditional country ham used in just about every restaurant and fast food places in Spain. It is obtained from a breed of white Europe pigs from the Iberico kind that produces a soft and mild flavor. Is also lower in salt than the American Ham because it is dry cured in the clean mountain air for over 16 months rather than smoked and heavy salted.
